3-4 dessert apples, peeled and sliced into 3-4 mm thick rings
2 tbsp lemon juice
150 g caster sugar
2 eggs
150 ml milk
75 ml olive oil
250 g plain flour
1 1/2 tsp baking powder
1/4 tsp ground cinnamon
Grapeseed oil-for deep frying
Icing sugar-for dusting
Place peeled and sliced apples in a bowl, sprinkle with lemon juice and 3-4 tbsp of caster sugar. Mix. Leave for 30 minutes.
To make the batter: mix eggs, milk, olive oil, remaining sugar. Sift the flour, baking powder, cinnamon. Stir well to make a thick, smoth batter. Set aside to rest 20-30 min.
Heat the oil. Dip the apple ring in the batter and fry until golden golden and crisp. Drain on kitchrn paper. Dust with icing sugar. No matter how the apples served, warm or cool, they are good with tea or vanilla ice cream.
