Healthy style quinoa-broccoli fritters

250-300 g broccoli

4 tbsp wholegrain wheat flour

3 eggs

250 g cooked quinoa

3 tbsp chopped fresh chives

Zest of 1/2 lemon

Greek yogurt (to serve)

Cook the broccoli in boiling water until tender, drain. Mix the flour and eggs, add broccoli, quinoa, chives, and lemon cest. Season with salt and black pepper. Form rounds(“blinis”) (1tbsp of mixture) on a pan and fry with olive oil over a medium heat, 3-4 minutes on each side.

To serve add some greek yogurt and extra chives.

If you are thinking of diversity you can add salmon(cut into pieces) in the mixture or feta cheese.
