Venetian ring biscuits

Hey there,

Just try these delicious biscuits which are typical for the island of Burano, next to Venice.

3 eggs yolks

100 g sugar

120 g softed butter

Pinch of salt

Finely grated cest of one lemon

Vanila extract(or vanila seeds) -choose by taste

250 g all-purpose flour

Whisk the egg yolks in a bowl with the sugar until the mixture has a mousse-like consistency. Add the softened butter, salt, vanilla extract, lemon cest, then sifted flour. Knead the dough. Shape it into a log. Refrigerate it in plastic wrap for (al least) one hour. I prefer to do it overnight to enjoy only shaping buscuits next day))

Cut the dough into pieces. I usually devide the dough into 25 pieces(25 g each).Roll each piece into a sausage 1 cm thick and shape them into rings.

Arrange the rings on the baking tray lined with baking paper. Refrigerate for 15 minutes.

Bake in the oven (170 C) until the biscuits are lightly golden(for about 15 min). Let them cool and enjoy!
