135 g unsalted butter, softened
135g soft light brown sugar
1 large egg
1/2 tsp vanilla essence
190 g plain flour
1/4 tsp salt
1/4tsp ground cinnamon
1/2 tsp bicarbonate of soda
1 your favourite big autumn harvest apple
60g rolled oats
Preheat the oven to 170 ºC. Line two baking trays with baking paper.
Cream together the soft butter and sugar.(I use freestanding electric mixer) Add the egg and vanilla essence and mis thoroughly on a medium speed.
Sift together the flour, salt, cinnamon and bicarbonate of soda.Add these dry ingredients to the creamed mixture in two batches.Mix thoroughly.
Peel and finely grate the apple.Squeeze all the liquid out of them.Add the oats and grated apple to the cookie dough.
Break off pieces of the dough(1 tsp in size), roll into balls and arrange on the prepared baking trays. Let the space between the cookies be 5-7 cm (they will spread during baking).
Place in the oven and bake for 15-20 minutes or until the cookies are light golden brown. Leave on the sheets for about 10 minutes to cool and to save the shape.
