Spinach & kale falafel

70 g kale leaves(chopped)

1 cup spinach

400 g cooked chickpeas

1 finely chopped onion

1 tbsp chia seeds

1 garlic clove

1 1/2 teaspoons ground cumin

1/2 teaspoon baking powder

sea salt, black pepper

extra vigrin olive oil for brushing

Preheat the oven to 220 C. Line a baking tray with non-stick baking paper.

Place chickpeas, onion, kale, spinach, garlic, cumin, baking powder, salt and pepper in a food processor and process until finely chopped.

Form each 2 tbsp spoons of the mixture into patties and place on the tray. Brush the patties with olive oil and bake for 15 minutes.

Brush the patties again and leave in the oven for another 10 minutes (until golden).
